I made this today and it's absolutely delicious! Pics aren't great quality took em with my phone ^^ (i personally like the cake chilled...very refreshing on a hot day!) Ingredients:Cake:- 1 Golden Yellow cake mix
- 4 eggs
- 1/4 cup apple sauce
- 1 10 oz. tin mandarin orange drained, liquid reserved.
Topping:- 1 14 oz. tin crushed pineapple with juice
- 8 oz. container Cool Whip
- a 3 1/2 oz. pkg instant vanilla pudding
Directions:Cake:1. Preheat oven to 350F 2. With mixer, beat all ingredients(except oranges), but including the reserved liquid from oranges for about 2 minutes 3. Stir in oranges by hand 4. Pour into greased and floured 9x13" cake pan 5. Bake for 30-35 minutes, or until toothpick inserted in center of cake comes out clean 6. Cool completely Topping:7. Mix dry pudding with pineapple and juice till combined and thick 8. Fold in Cool Whip 9. Put on top of cooled cake. Refrigerate a few hours to allow melding of flavors (Like I said earlier because of all the fruit I prefer this cake to be served chilled!) Very easy to make! Enjoy!
